chocolate chip zucchini bread

If your zucchini plants are normal, then chances are you've got more zucchini than you know what to do with. I found this recipe on allrecipes.com, but I adapted it into a somewhat healthier version by tweaking a few things here and there based on what people suggested in the comments section. . . used less oil, added in some whole wheat flour, reduced the total amount of sugar and mixed in some brown sugar just for fun. Perhaps the addition of chocolate chips negate the healthy changes. Oh well, it's really good and super moist!

Chocolate Chip Zucchini Bread

ingredients
2 c. white flour
1 c. whole wheat flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
3 eggs
3/4 c. sugar
1 c. brown sugar
1/2 c. canola oil
1/2 c. unsweetened applesauce
3 tsp. vanilla
2 c. grated zucchini
1 1/2 c. chocolate chips
walnuts, optional

directions
Grease & flour two 8"X4" pans. Preheat oven to 325.

Sift flour, baking soda, baking powder, salt, and cinnamon together.

Beat eggs, oil, applesauce, vanilla, and sugar. Add sifted ingredients and beat well. Stir in zucchini and chocolate chips until well combined. Pour batter into prepared pans.

Bake 40-60 minutes or til tester comes out clean. (Both times I've made it, they've baked longer than 60 minutes.)

Cool in pans 20 minutes. Remove and cool completely.

Anything with chocolate chips would be a big hit with me. LOL!!!! Sounds good!
